Switching gears just a bit, instead of dog talk let’s talk desserts! I love to bake and make desserts, especially quick and easy desserts. This is a new recipe I found on allrecipes.com, I like this site, it has tons of really great recipes and a comment section so you can see what others have to say. I really love a good lemon pie, you know the kind that is a sweet and tart with a creamy texture and this pie has all of those things. It was so easy to put together, only takes me about 15 minutes and voila yummy pie! I have made four of these so far, one to try, one for a dish to pass at the church picnic a couple of weeks ago, and two more tonight for my dish to pass tomorrow at my family reunion.
Creamy Lemonade Pie

Original Recipe Yield 6 servings
- 1 (5 ounce) can evaporated milk
- 1 (3.4 ounce) package instant lemon pudding mix
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup lemonade concentrate
- 1 (9 inch) graham cracker crust
- In a mixing bowl, combine milk and pudding mix; beat on low speed for 2 minutes (mixture will be thick). In another mixing bowl, beat cream cheese until light and fluffy, about 3 minutes. Gradually beat in lemonade concentrate. Gradually beat in pudding mixture. Pour into crust. Cover and refrigerate for at least 4 hours.
And for all you chocolate lovers out there here is a great fudge recipe I saw on Rachel Ray a few years ago. It tastes wonderful, creamy and chocolaty, comes out exactly the same every time and the best part is you do it in the microwave and only takes about ten minutes from start to finish and ready to eat in about an hour. I have made this fudge countless times. I’ve given it as gifts at Christmas, it goes on the raffle table at my family reunion and sometimes on the dessert table too. This year it is going to be part if my entry at the county fair, so wish me luck
Rachel Ray’s 5 Minute Microwave Fudge
- 1 – 12 oz. bag if semi sweet chips (I have also used Hershey’s dark chocolate chips)
- 3/4 cup butterscotch chips
- 1 can sweetened condensed canned milk
- nuts, optional
Put all ingredients in a microwave safe bowl stir, microwave for 5 minutes stirring half way through, remove after 5 minutes and stir well until smooth, poor into a 7×11 (I think that’s the size of my pan, it is a small rectangle) foil lined pan and refrigerate for about and hour or until cool and firm. Cut into one inch squares, a pizza cutter works great for this, makes about 2 pounds. Store in the frig in warm weather.
